Apple Cinnamon Oatmeal Cups are easy to make. Simply mix the ingredients in a large bowl, divide the mixture into a muffin pan and bake until set. Just like that you have a new and exciting way to eat oatmeal. These oatmeal cups can be made ahead of time and they are great for meal prepping.

Ingredients

- Rolled Oats - Used as the base for the oatmeal cups. Be sure to use rolled oats and not steel cut or quick oats as they have different cooking times.
- Baking Powder - Helps to give the oatmeal cups more of a cake like texture.
- Cinnamon and Nutmeg - Spices to add some flavor.
- Milk- I used skim milk for this recipe.
- Maple Syrup - Used to sweeten the oatmeal cups.
- Unsweetened Applesauce - Also adds some sweetness and adds some extra apple taste.
- Chopped Apples - Use whatever type of apple you have on hand. Be sure to cut the apple into small pieces.

Instructions
Preheat oven to 350F. Grease a muffin pan with non-stick cooking spray.

In a large bowl, mix together rolled oats, baking powder, cinnamon and nutmeg.

Add milk, unsweetened apple sauce, maple syrup and chopped apples. Mix well.

Divide batter evenly into prepared muffin pan.

Bake for 30-35 minutes or until the cups look set and the liquid has been absorbed. Let the cups cool completely in the pan before removing them. Makes 12 oatmeal cups.
Hint: Make sure to grease the muffin pan so the oatmeal cups don't stick!
Substitutions
- Milk - You can substitute the milk with any plant based or non plant based milk.
- Maple Syrup - Feel free to use liquid honey instead.
- Unsweetened Apple Sauce - You can use sweetened applesauce instead but keep in mind the oatmeal cups will be sweeter.

Muffin Pan - I used a silicone muffin pan for this recipe but you can also use a nonstick metal muffin pan.
Storage
Apple Cinnamon Oatmeal Cups can be stored in the refrigerator in an airtight container or bag for up to five days.
Apple Cinnamon Oatmeal Cups freeze well. Place oatmeal cups in a freezer safe container or bag and freeze up to three months. Thaw in the fridge or at room temperature when ready to eat.
Top tip
Make sure to let the oatmeal cups completely cool before removing them from the pan so they have a chance to set.
