- 3 cups rolled oats
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- ¼ teaspoon nutmeg
- 1 ½ cups milk
- 1 ½ cups unsweetened applesauce
- 1-2 tablespoons maple syrup see notes
- 1 ½ cups apples chopped
Preheat oven to 350F. Grease a muffin pan with non-stick cooking spray.
In a large bowl, mix together rolled oats, baking powder, cinnamon and nutmeg.
Add milk, unsweetened apple sauce, maple syrup and chopped apples. Mix well.
Divide batter evenly into prepared muffin pan.
Bake for 30-35 minutes or until the cups look set and the liquid has been absorbed. Let the cups cool completely in the pan before removing them. Makes 12 oatmeal cups.
Add two tablespoons of the maple syrup if you prefer your oatmeal cups on the sweeter side.
Make sure to grease the muffin pan so the oatmeal cups don't stick!
