Chocolate Chip Cookie Pie

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter melted
  • 1 cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1 ¼ cup chocolate chips divided

Instructions

  • Preheat oven to 350F.
  • In a medium size bowl, add flour, baking soda and salt. Whisk to combine.
  • In a large bowl, add melted butter, brown sugar and granulated sugar. Beat with an electric mixer on medium speed until combined. Use a spatula to scrape down the sides of the bowl as necessary.
  • Add eggs and vanilla. Beat with electric mixture on medium speed until the batter is smooth. Use a spatula to scrape down the sides of the bowl.
  • Add half the flour mixture to the batter. Beat on low until the flour starts to incorporate, then increase speed to medium. Scrape down the sides of the bowl with a spatula. Repeat with remaining flour mixture and beat until all of the flour has been incorporated.
  • Add 1 cup chocolate chips to the batter. Use a spatula to fold in the chocolate chips.
  • Add dough to pie plate. Use spatula to spread dough evenly in the pie plate.
  • Sprinkle with remaining chocolate chips.
  • Bake for 27-30 minutes or until the edges of the pie start to brown and the middle no longer looks glossy. The middle of the pie will look slightly undercooked but it will continue to bake after it has been removed from the oven. Let pie cool completely or overnight before cutting into slices. Makes 16 slices.

Notes

Make sure to cool the pie completely or overnight before cutting into slices as this allows the gooey texture of the cookie pie to set.
Do not overbake the pie! If Chocolate Chip Cookie Pie is overbaked it will be hard and dry. If the pie is baked right, the center will still be a little gooey.
Chocolate Chip Cookie Pie can be stored in an airtight container or bag at room temperature for up to three days.
