Chocolate Chip Blondies

- ½ cup unsalted butter melted
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- ¼ teaspoon salt
- 1 cup all-purpose flour
- 1 cup chocolate chips
Preheat oven to 350F. Line an 8x8 baking sheet with parchment paper.
Add melted butter and brown sugar to a medium size bowl. Using an electric mixer, beat at medium speed for one minute.
Add eggs and vanilla. Use mixer to beat for another minute. Use a spatula to scrape down the sides of the bowl as necessary.
Sprinkle salt over the dough. Add flour. Set electric mixer to low and beat until the flour starts to incorporate. As the flour mixture starts to incorporate, you can increase the speed to medium. Use a spatula to scrape down the sides of the bowl.
Add chocolate chips. Use a spatula to fold in the chocolate chips.
Add dough to prepared baking pan. Use a spatula to spread the dough to the edges of the pan.
Bake at 350F for 20-23 minutes. The blondies will still look undercooked in the middle but they will continue cooking after they have been removed from the oven. Cool for one hour before slicing into bars. Makes 18 blondies.
Let the melted butter cool slightly before mixing with the brown sugar.
Do not overbake the blondies. If you overbake the blondies, they will be dry. Bake for 25 minutes or until the edges look set. The middle will still look underbaked but it will continue to bake after you remove it from the oven.
