Apple Cinnamon Bread

With sweet pieces of apple and warm spices, Apple Cinnamon Bread is soft, fluffy and delicious at any time of day.

Ingredients

  • 1 medium apple
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • ¼ cup maple syrup
  • ¾ cup almond milk

Instructions

  • Preheat oven to 350F. Grease a 9x5 loaf pan with cooking spray. I like to use an olive oil cooking spray.
  • Peel and dice the apple. Set aside.
  • Add flour, baking soda, baking powder, cinnamon and nutmeg to a medium size bowl. Whisk to combine.
  • Add eggs, unsweetened applesauce, maple syrup and almond milk to a large bowl. Whisk to combine.
  • Add the dry ingredients to the wet ingredients. Using a spatula, fold dry ingredients into wet ingredients. Fold until the flour mixture is incorporated and there are no lumps in the batter.
  • Add diced apples to the batter.
  • Use a spatula to fold in the apples.
  • Pour batter into prepared baking pan.
  • Bake for 50-60 minutes or until a toothpick inserted into the bread comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Cut into 12 slices.

Notes

Make sure to grease the loaf pan before pouring in the batter. The bread will stick if you do not grease the pan.
Make sure to peel the apple before dicing it. I find the apple cooks best in this bread without the peel.
Apple Cinnamon Bread can be stored at room temperature in an airtight container or bag for up to three days.
Apple Cinnamon Bread freezes well. You can freeze the whole loaf or you can cut the loaf into slices before freezing. Make sure to place the bread into a freezer safe container or bag before freezing. I prefer to cut the loaf into slices so I can take out a couple of slices at a time to enjoy. You will be lucky if the bread even makes it to the freezer!
