No Bake Cookies

No Bake cookies are rich, chocolatey and chewy. The combination of cocoa, oatmeal and coconut make these a delicious sweet treat.

Ingredients

  • ½ cup butter unsalted
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • ½ cup milk
  • 2 teaspoons vanilla
  • 3 cups oats
  • 1 cup coconut unsweetened

Instructions

  • Line two large baking sheets with parchment paper.
  • In a large saucepan, add butter, milk, granulated sugar and cocoa powder.
  • Place pan on stovetop and turn the heat to medium (about 4-5).
  • Use a large wooden spoon to continuously mix the butter, milk, granulated sugar and cocoa powder.
  • Once the ingredients have completed melted, you will have a smooth liquid.
  • Continue mixing until small bubbles start to form.
  • Remove pan from heat and stir in vanilla.
  • Add oats and coconut and stir until combined.
  • Scoop 2 tablespoons of batter with a spoon and drop onto prepared baking sheets. Continue until all of the batter has been added to the baking sheet.
  • Transfer baking sheet to fridge or freezer to chill the cookies.
  • Chill for 30 minutes in the freezer or one hour in the fridge.
  • Remove from the fridge or freezer and enjoy! Makes 24 cookies.

Notes

Do not use steel cut oats in this recipe! It will change the texture of these cookies.
No Bake Cookies can be stored in the fridge in an airtight container or bag for up to three days.  No Bake Cookies freeze well.  Place cookies in an airtight container or bag and freeze up the three months.  Thaw in the refrigerator.  You can also eat them straight from the freezer!
