Line two large baking sheets with parchment paper.
In a large saucepan, add butter, milk, granulated sugar and cocoa powder.
Place pan on stovetop and turn the heat to medium (about 4-5).
Use a large wooden spoon to continuously mix the butter, milk, granulated sugar and cocoa powder.
Once the ingredients have completed melted, you will have a smooth liquid.
Continue mixing until small bubbles start to form.
Remove pan from heat and stir in vanilla.
Add oats and coconut and stir until combined.
Scoop 2 tablespoons of batter with a spoon and drop onto prepared baking sheets. Continue until all of the batter has been added to the baking sheet.
Transfer baking sheet to fridge or freezer to chill the cookies.
Chill for 30 minutes in the freezer or one hour in the fridge.
Remove from the fridge or freezer and enjoy! Makes 24 cookies.
